Two separate restaurants will fill the 6,000-square-foot space that was home to Redondo Beach’s Chez Melange.

“We gutted it and reconfigured it with the city and got two restaurants in the same space,” said John Kulacki, who is behind both new eateries with business partner Michael Bakert.

Table Manners, a modern American comfort food restaurant, opened its doors on Feb. 17, almost a year after Chez Melange closed at the location. The second restaurant, seafood spot Perfect Storm, will open once indoor dining is allowed.

“It is a complete scratch kitchen. We’re making our own cheese, we’re making our own ketchup, we’re making our own everything. We’re grinding our own beef for burgers,” Kulacki said, referring to Table Manners.

Currently, Table Manners is open for dinner starting at 4 p.m. but plans call for lunch to come online by the first week in March followed by weekend brunch.

It has a 46-seat patio and a 36-seat parklet is now being constructed just outside the restaurant’s front doors. The interior has 54 seats.

On the menu are dishes including dry-aged burgers and entrees such as roasted half chicken and a spicy salmon marinated in Habanero sauce.

There are also shared plates including Japanese sweet potato tater tots mixed with mozzarella, seared shrimp deglazed with gin, oysters and a sweet and sour calamari dish.

When Perfect Storm opens, it will have 80 seats and a rotating menu focusing on seafood.

“We’re going to change the style of seafood every couple of months. We’ll have a Baja seafood type thing; we’ll have a Peruvian seafood type thing. We’re going to be changing the menu to represent seafood throughout the world,” Kulacki said.
