When Calo Kitchen + Tequila restaurant opened its hip, high-end Mexican restaurant in the fall of 2018, it created a buzz in El Segundo.
Owner Clemente Heredia is the latest in his family to run an eatery in California.
"As a former LMU student I spent a lot of time in the South Bay and have created a lot of memories within the beach cities," Heredia said. "So, after many years, it seemed like it was time to open a restaurant here. I have been in the restaurant business for 10 years and enjoy the energy and spirit within the hospitality industry. That's what makes us special at Calo, you can instantly feel the energy when you walk through the doors. Over the next few months we look forward to supporting the community and establishing an on-going relationship with all of our customers."
The Heredia family opened Carmelitas Kitchen in Rancho Santa Margarita in 1962 and expanded to El Segundo last winter.
This is the fifth restaurant and new concept for the Heredia family, who now own four traditional Mexican restaurants. Heredia continues to serve family recipes including its carnitas, which uses kurobuta pork for its pork and pineapple tacos.
Calo Kitchen also serves more than 100 sipping tequilas with a focus on small batch made “Tahona style.” Tahona style uses a volcanic stone wheel to crush the roasted agave hearts, separating the sweet juice from the pulp. Tahona tequila has a smoother and sweeter profile and is best for sipping.
